Ingredients:
1 lbs cooked and seasoned chicken breasts, sliced or chopped
1 Naval orange, juiced
1/2 lemon, juiced
1 green pepper, seeded, deveined and thinly sliced
1/2 cucumber, halved and thinly sliced
2 cups cherry tomatoes, halved
1/2 red onion, halved and thinly sliced
1 cup kalamata olives, roughly chopped
1/3 cup red wine vinegar
1/2 cup extra virgin olive oil
Salt + Pepper to taste
Mix of greens, optional
4 medium size Pita breads/or Naan, heated until pliable
How to make:
In a large mixing bowl add in green pepper, cucumber, tomatoes, onion, red wine vinegar, olive oil, salt and pepper, mix well and leave to rest for at least 15 minutes before serving so it soaks up with all the flavors.
In a medium mixing bowl, add in your chicken and citrus juice and leave to rest for 5 minutes.
How to assemble:
Place Naan bread on plate, add a dollop of homemade tzatziki and spread evenly. Place chicken over your tzatziki. Now top with veggie salad and greens mix and enjoy!
