Lemon Ricotta Ravioli al Cacio e Pepe

For date night, friends night, or just any night. I give this a 10/10. and no one payed me to say this, lol.

5 INGREDIENT RECIPE Time: 20 minutes


you'll need:

1 pack of Trader Joe's Lemon Zest Ricotta Ravioli
1 cup Parmesan Cheese, shaved
1 Lemon, juice + rinds
1/3 cup Parsley, chopped
2 tablespoons Ghee or butter
1 tablespoon Maldon salt OR 1/2 tablespoon regular salt
Pepper, I use a LOT. like 2 tablespoons a lot.

Cooking instructions:
1) Cook pasta according to package instructions, and reserve.
2) In a large saucepan over medium-low heat, melt your ghee, add in lemon rinds and salt and cook until softened.
3) Turn heat down to low. Add in cooked pasta, lemon juice and pepper, once fully incorporated add in your parmesan cheese and cover pasta completely.
4) Once it's fully incorporated, sprinkle with parsley and serve!
