Loaded "Baked" Potato


This is an easy one, you’ll need…

A potato, a microwave, a fork and wet paper towels (or a damp kitchen towel).

We want towels to be damp so that we don’t burn down our kitchen, AND this will help steam our potato, so it’ll cook 3x as fast.

  • 1 Russet Potato (any potato will work here, but I recommend using Russet or Idaho.)

  • Olive oil

  • Salt

To cook potato:

With a fork, make small holes to the potato, I just jab it a couple times with a fork and drizzle some olive oil and season with salt, fully coated. Take your damp towels and wrap the potato completely. Place potato in the microwave for 2 1/2 minutes on HIGH or until tender inside.

Once my potato is cooked through, I just slice down the middle BUT not all the way through (we want our toppings on the potato, not our plate).
