Serves 6
1/2 red cabbage, shredded
1/2 green cabbage, shredded
1 carrot, shaved
1 can mandarines, drained
1/2 cup almonds & cashews, chopped
1/2 bunch cilantro, chopped
1/2 lbs shrimp, cooked with tail on
This is an easy one. Toss together all the ingredients listed above BUT the shrimp. Once fully mixed toss your salad with your vinaigrette and reserve 2 tablespoons of the dressing. Now top salad with your shrimp and add in the remainder of vinaigrette over and enjoy!
Garlic Sesame Vinaigrette:
1/2 cup rice vinegar
1/4 cup avocado oil
2 tablespoons sugar
2 tablespoons soy sauce
2 whole garlic cloves
1 tablespoon sesame oil
1 tablespoon toasted sesame seeds
Mix well and incorporate into your salad. This is also a great marinade for chicken, salmon, and any type of fish.
