Shaq's Burgers + Bacon Date Jam + Gochujang Mayo

Ok, this one is FOR REALS one of my favorite recipes. I give this a full blown 20/10.

You'll need:

JAM:

1/2 onion, chopped

8 oz bacon, chopped

10 dates, pitted and chopped

1/2 cup white wine (OPTIONAL to deglaze pan - deglaze is just a fancy word but it basically unsticks all the caramelized bits from the pan)


In a large sauce pan, add in your chopped bacon and cook until golden, about 5 minutes. Once the bacon starts to ooze add in your onion and dates, give it a good mix and let it cook down for 15-20 minutes. Once it's fully incorporated add your splash of wine, cook for 5 minutes and your JAM is ready to go. Season as you go!


GOCHUJANG MAYO:

4 tbs mayo

1 chipotle pepper, minced

1 tbs rice vinegar

1 tsp Gochujang paste

1 tsp soy sauce (or liquid aminos)

1 garlic clove, minced

Pepper


Mix all of your ingredients until fully incorporated. (I recommend starting with the vinegar and Gochujang paste and go from there.


BURGERS:

2 pack of Shaq's Beef Burger Patties (you can find these at Stater Bros, will leave link to shop below)

4 Potato buns (or burger buns of your choice)

2 cups arugula

2 tbs olive oil

1/2 lemon, juice

Salt


For the burgers:

Once the grill is HOT. Grill your patties and buns directly over the fire. (You decide how you'd like your burgers cooked). Add some oil to the buns. I recommend seasoning patties with salt ONLY.

For Medium Rare... cook for about 5 minutes per side. (These patties are big and juicy so let them go for longer if you'd like them medium/well done.)


For salad:

Toss arugula, olive oil, lemon juice and salt.


Now... enjoy!
