Shrimp Ceviche
- 1 lbs cooked shrimp, deveined, chopped into 1/2 inch pieces.
- 1/3 cup lime. juiced
- 1 jalapeño, seeded, deveined, diced
- 1 whole roma tomato, seeded, diced
- 1/2 red onion, diced (for a softer flavor, use 1/2 bunch green onion)
- 1 Cilantro bunch, roughly chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
-1 teaspoon garlic powder (optional)
- Avocado, sliced for garnish
- Cilantro leaves, for garnish
Mix all of the previously mentioned ingredients for your ceviche, and enjoy.
Tostadas or Totopos (store-bought or homemade, I'll always prefer homemade.)
You can either bake these for about 12-15 minutes at 350F, flipping half way through. Or fry them for a minute, or until golden. NOT BROWN.

-Salt
Spicy Mayo (this one is super easy, you just need a blender, or a whisk, or a fork, lol.)
- Canned Chipotle ( 1-5 depending on spice level desired.)
- 1 Cup Mayo (any kind works)
- 1 tablespoon rice vinegar (white wine vinegar works.)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1-2 teaspoons of monk fruit or Splenda
