(The key to this salad is the sweet vinaigrette to balance the endive bitterness out)
You’ll need:
1 endive, sliced into rounds (ribbons)
1 cup arugula
1 orange, peeled and sliced (I used clementines)
1 oz goat cheese, bite size chunks
plate beautifully. always add height when plating for visual pleasure 😉
Honey Vinaigrette:
1/2 cup olive oil
1/2 cup red wine vinegar
2 tbsps honey
1 tbsp dijon mustard
1/2 tbsp stone ground mustard, optional
1 tbsp garlic, minced
1 tbsp thyme
1/2 teaspoon tarragon, optional
Pinch of salt + pepper
